Gluten-free Oatmeal Cookies

I had a hard time finding a good recipe for gluten-free oatmeal cookies. I don’t like using oat flour, it doesn’t come out right when I use it and I don’t like the taste. This is the batch I made today and they are super yummy!

GF Oatmeal Cookies

1 cup softened butter (2 sticks)
1 cup brown sugar
1/2 cup sugar
1 tsp vanilla
2 eggs
1 1/2 cups GF flour (I used Pamela’s Bread Mix flour, the type of flour you use makes a HUGE difference. This one worked great.)
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
3 cups gluten-free oats (not all oats are gluten-free, they must say specifically that they are)

Preheat oven to 350. Beat butter and sugars together. Add vanilla and eggs and beat until mixed. In a separate bowl, whisk together flour, cinnamon, baking soda and salt. Add to butter/sugar mixture. Hand mix in oats. Drop by rounded teaspoonfuls onto a greased cookie sheet. Bake about 10 minutes.
